counting my blessings

Over the weekend we had the pleasure of spending time with my lovely friend Amber and her sweet husband Eric.
If you've read this for awhile then you know that Amber was a huge help in the crafting process of our wedding , with a wonderful heart and an open ear.
 We hadn't seen each other since the big day and were eager to hang out (of course)
We headed out to the swankiest little restaurant!!
Instantly I was super in love with it.
And of course I had my camera in my purse but was too busy running my mouth to pull it out and take pictures.
That is until we got our table.... and we sat under the beautiful twinkle lit trees and paper lanterns.
Absolutely magical.
And the food was good too.
My prix fixe meal:
Filet Mignon and Shrimp Scampi.

We had such fun spending a nice 'grown up' evening out with Amber and Eric.

Sunday I decided to make some down home goodness to get the week started off right.
I've been doing super well with our meal planning and sticking to it so I kept it up by making 
(that's the Pioneer Woman if you're not familiar)
For serious.
I have never in my life attempted to make such a thing nor have I actually had it at home. 
Only at restaurants post a night of drinking & dancing and only from Babe's plate.
So I was excited to see how it was going to turn out.
My husband and father moaned and groaned like it was the best thing since sliced bread.
Chicken Fried Steak
Mashed potatoes
 Sweet Corn
and a boatload of gravy

No one could really move for awhile afterwards......

My husband's birthday is this weekend so my mom sent him some 'love' in the mail.

Really Mom?
There are about 9 different kinds of cookies in there and at least 4-5 of each.
Needless to say I took those bad boys to work with me this morning =)
Not all mind you - had to leave some for the birthday boy and the Sweet Pea ; but enough to not be so tempted to grab one every time I pass the box.
(not that that was happening)

You ever notice how my weekends seem to center around food?
Does anybody else live like this?

I realize though that I am incredibly blessed.
Every week I am able to recount the wonderfulness of the weekend - the fun, the food, the family and friends.
It means so much to me to be able to not only have these moments and make these memories but to be able to document them too!!!

It makes me all the more grateful and as we head into the holiday season give me that much more to be thankful for!!!
